Acapulco Chicken
This simple Acapulco chicken dish features a spicy saute of chicken breast, tomato, onion, bell pepper, jalapenos, and hot pepper sauce.
Chicken should be seasoned with salt, pepper, and 1/2 tablespoon chili powder.
For 3 to 4 minutes, or until the chicken is no longer pink, saute the seasoned chicken in oil in a large skillet over medium-high heat.
With a slotted spoon, remove from skillet and keep warm.
Bell pepper and onion should be stir-fried in the same skillet until soft.
Add the tomatoes, jalapenos, and hot sauce along with the final 1/2 tablespoon of chili powder.
Add chicken and continue to cook, stirring, for an additional 3 to 5 minutes.
