Avocado Whole Wheat Pasta Salad
Avocado pasta salad is a vibrant and filling side dish that includes lots of vegetables and a straightforward vinaigrette dressing.
Large pot of salted water should be brought to a boil.
The rotini should be cooked at a boil for 10 minutes or until it is tender but still firm to the bite.
Drain and rinse under cold water to avoid sticking.
In a bowl, combine honey, lemon juice, vinegar, and olive oil and whisk until dressing is smooth.
In a bowl, combine the pasta, avocados, green bell pepper, carrot, green onions, celery, garlic, basil, parsley, and cilantro.
Over the pasta mixture, drizzle the dressing and toss to combine.
To the pasta salad, add salt, pepper, and lemon zest.
At room temperature, serve.
