Blueberry Cornmeal Muffins
Blueberry muffins with the hearty flavor of cornmeal. Moist, rich, and heavenly! I’m happy to share my recipe with you.
Set oven to 375 degrees Fahrenheit (190 degrees C).
Muffin tins should be greased or lined with paper liners.
Into a large bowl, sift together the flour, cornmeal, brown sugar, salt, and baking powder.
Blueberries should be dredged in the sifted ingredients.
Combine the milk, butter, and egg in a small bowl.
Just enough to moisten the flour mixture, mix in the wet ingredients.
Fill muffin tins with prepared batter.
Bake for 20 minutes in a preheated oven.
Allow muffins to cool in the pan for 10 minutes before removing.
