Cannoli Shells
These shell are wrapped around cannoli tubes and deep fried. Cannoli shells are traditionally filled with a rich ricotta cheese filling.
Combine the cinnamon, sugar, and flour in a medium bowl.
Add the white wine and stir with a fork.
Once the dough has formed a ball, transfer it to a surface that has been lightly dusted with flour and knead for 15 minutes or until smooth.
For about 2 hours, cover and chill.
In a deep, heavy skillet, heat 1 inch of oil to 365 degrees Fahrenheit (180 degrees F).
1/3 of the dough should be rolled out into a large circle that is as thin as paper on a lightly dusted surface.
8 (5-inch) circles should be cut out.
Each circle should be wrapped around a cannoli mold and sealed with egg yolk.
