Caramel Pecan Cookies
Cookies that are great for kids of all ages are made by encasing caramel candies in cookie dough and rolling them in pecans.
The butter, 1 cup of white sugar, and 1 cup of brown sugar are smoothed out in a large bowl.
Stir in the vanilla after beating in each egg one at a time.
After combining the flour, cocoa, and baking soda, thoroughly stir it into the sugar mixture.
Add 1/2 cup of the pecans and stir.
Dough should be covered and chilled for an hour or until firm.
Set oven to 375 degrees Fahrenheit (190 degrees C).
The remaining 1/2 cup of pecans and 1 tablespoon of sugar should be combined in a shallow bowl and left aside.
Each caramel covered in chocolate should have 1 tablespoon of cookie dough pressed around it to form a ball.
Place the pecan side up and two inches apart on ungreased baking sheets after dipping each ball in the pecan mixture on one side.
