Easy Mediterranean Pasta
This fusion dish is quick and easy. It combines some classic ingredients from the lovely Mediterranean region with a Middle Eastern touch. This simple recipe is perfect hot or cold for summer evenings.

Large pot of lightly salted water should be brought to a boil.

Once the pasta is added, bring the water back to a boil.

After adding the olive oil and garlic to the pasta and water, cook for an additional 11 minutes, or until the pasta is tender but still firm to the bite.

Drain.

Re-add the pasta to the pot and lower the heat to medium-low.

The pasta should be stirred with the tomatoes, bell pepper, fava beans, onion, and lemon juice before simmering for 7 to 8 minutes, or until hot and the flavors have combined.

To serve, top with sliced almonds and halloumi cheese.
