Grilled Garlic Parmesan Zucchini
Grilled zucchini slices get a savory, garlic and Parmesan cheese topping for a quick, savory side dish.
Set an outdoor grill to medium-high heat and give the grates a quick oiling.
Slice each half of the zucchini into three lengthwise slices to create six slices per zucchini after cutting it in half crosswise.
Each zucchini slice should have the butter, garlic, and parsley spread on both sides.
Place the slices cheese sides up crosswise on the heated grill to prevent them from falling through.
Sprinkle Parmesan cheese on one side of each slice.
Grill the zucchini slices for about 8 minutes, or until the cheese has melted and the slices are thoroughly cooked.
