Hearty Vegetable Lasagna
This hearty vegetable lasagna is packed full of flavor from mushrooms, peppers, and onions. And it’s easy to make and is the perfect comfort food.
In a big pot of boiling water, cook lasagna noodles for 10 minutes, or until they are al dente.
Drain after rinsing with cold water.
In a large saucepan, heat the oil.
Cook and stir the mushrooms, green peppers, onion, and garlic for about 5 minutes, or until they are tender.
Bring to a boil while adding basil and pasta sauce.
Simmer for 15 minutes on low heat.
In a medium bowl, combine eggs, ricotta, and 2 cups mozzarella cheese while the sauce is simmering.
Set the oven to 350 degrees Fahrenheit (175 degrees C).
Butter a 9×13-inch baking pan.
