Peruvian Locro (Butternut Squash)
Locro is a tasty and filling Peruvian dish made from mashed butternut squash, Cheddar cheese, and butter that is served with rice.

Put the squash in a big pot and cover it with water.

Add salt.

Water should be brought to a boil before the squash is cooked for 20 minutes.

Return the drained squash to the pot.

Use a potato masher to mash the squash.

Add the evaporated milk, butter, and salt.

Beat with an electric mixer until the mixture is smooth and creamy.

Add corn peas and Cheddar cheese to the squash mixture, and cook and stir for 10 minutes, or until the cheese is melted.

Over rice, serve the squash mixture.
