Pressure Cooker Vegan Red Lentil Soup
Tofu, tomato puree, and red lentils are used to make this vegan soup, which is high in protein. It takes less than an hour to cook in a pressure cooker.
Over medium-high heat, add garlic to a pressure cooker and cook until fragrant, about 1 minute.
For about five minutes, add the tofu and brown it thoroughly.
Place the tofu on a plate.
With 2 tablespoons of the cilantro set aside for garnish, add tomato puree, lentils, and cilantro to the pressure cooker.
Add 3/4 of the tofu and the vegetable broth and stir.
Using the pressure regulator over the vent and securely closing the cooker as directed by the manufacturer For about 10 minutes, heat until steam is continuously escaping and making a whistling sound.
Once the regulator is gently rocking, adjust the temperature.
For 23 minutes, cook on low heat.
Follow the manufacturer’s instructions and wait 5 to 10 minutes for the pressure to release naturally.
