Purim Hamantaschen with Prune Filling
Traditionally served during the Jewish holiday of Purim, these sweet hamantaschen cookies are filled with a traditional homemade prune filling.

In a small saucepan, combine the prunes, honey, and lemon juice.

Cover the area with water.

Bring to a boil, then lower the heat and simmer for about 10 minutes, or until the prunes are soft.

After cooling, remove the prune filling from the heat.

Set oven to 350 degrees Fahrenheit (175 degrees C).

3 baking sheets should be lined with parchment.

In a bowl, combine salt, baking powder, and flour.

With a wooden spoon, combine shortening, butter, and sugar until creamy.

Stir in the eggs until smooth.

Add vanilla extract and orange juice after mixing.

Add the flour mixture gradually while stirring until dough forms.

Make three balls from the dough.
