Sweet Potato, Bacon, and Veggie Skillet
This one-skillet frittata with sweet potato, bacon, and vegetables makes a simple dinner that needs very little of your attention and is finished in the oven.

Set the oven to 325 degrees Fahrenheit (165 degrees C).

In a 10-inch oven-safe skillet, heat the oil over medium heat.

Add onion and broccoli.

Cook for about 5 minutes, stirring occasionally, or until broccoli is tender and onion is barely translucent.

30 seconds after adding the garlic.

Add spinach and sweet potato and stir.

Cook for about a minute, or until spinach wilts.

Stir in the bacon.

In a bowl, combine eggs, half-and-half, chopped sage, salt, and pepper.

Pour the mixture over the skillet of vegetables.

Gently stir the egg mixture to distribute it evenly.

Place the skillet in the preheated oven, and bake for about 25 minutes, or until the eggs are completely set but not overcooked.

Before serving, let stand for five minutes.

Sage leaves are a nice garnish.
