Vegan Mushroom Salad
This recipe for mushrooms marinated in a lemony garlic dressing is a deliciously tart summertime treat that is vegan too.
In a sizable serving bowl, combine the vegetable oil, lemon juice, parsley, salt, and pepper.
Add the mushrooms and stir to coat.
Cover bowl with plastic wrap and chill for at least 4 hours, tossing occasionally.
