Sweet Orange Tamales
These sweet tamales with orange, almonds, and raisins are eaten as dessert in Mexico. Try to find extra sweet ripe oranges for the best flavor.
Corn husks should be soaked for 30 to 60 minutes in a bowl of boiling water.
Drain, then spread out on a tabletop and cover with a fresh, damp towel.
Oranges and 1 1/4 cups sugar are combined in a pan over low heat.
Cook for about 30 minutes, stirring occasionally, until the mixture begins to transform into jam.
Remove from heat and allow to fully cool.
Place the lard in a large bowl, add two or three ice cubes, and beat with an electric mixer until it is soft and creamy while the jam cools.
1 1/4 cups of sugar should be thoroughly incorporated.
