Apple Crisp Muffins
Apple crisp muffins are made by baking whole wheat and kamut flours with all the sweet components of an apple crisp. With a streusel topping, perhaps?
Set oven to 400 degrees Fahrenheit (200 degrees C).
Prepare 12 muffin tins with grease or paper liners.
In a bowl, combine the oats, whole wheat flour, kamut flour, brown sugar, baking powder, cinnamon, nutmeg, and cardamom.
Add the apples and combine.
In a different bowl, combine the honey, eggs, buttermilk, and canola oil.
Create a well in the center of the oat mixture and fill it with the buttermilk mixture.
Mix just enough to moisten the batter.
Oats should be left for five minutes to soften.
Fill muffin tins to the brim with batter.
Bake the muffins in the preheated oven for 20 to 25 minutes, or until they are golden brown and spring back when lightly touched.
