Potato Cheese Calico Soup
Yummy and easy to make. This recipe is so very full of flavor that I really believe all will just love this recipe!!
Combine potatoes, onions, and broth in a 3-quart pan.
Cook for 10 minutes, or until potatoes are tender, after bringing to a boil and then reducing heat.
Blend the soup in a blender after transfer.
Add milk, mushrooms, bell pepper, and green onions to the soup you just blended in the saucepan.
Over a medium-low simmer, add cheese a few tablespoons at a time, stirring constantly to ensure that it melts.
Serve after seasoning with salt and pepper and parsley.
