Applesauce Zucchini Bread
This applesauce zucchini bread, which is excellent for breakfast or dessert, is given texture by chopped pecans and spiced flavor by cinnamon.

Butter two loaf tins.

In a bowl, combine the flour, cinnamon, salt, baking soda, and baking powder.

In a different bowl, whisk together the eggs, sugar, and oil until well combined.

Applesauce made with zucchini, plus vanilla extract.

Stir in pecans after thoroughly blending the dry ingredients.

Pour into the prepared pans evenly.

Cook in the preheated oven for about an hour, or until a toothpick inserted in the center comes out clean.

Before slicing and serving, allow to cool slightly.
