Don’t rely on boxed-cake mixes when making cupcakes–this simple recipe makes 2 dozen homemade moist cupcakes that taste delicious with (or without!) frosting.

Set the oven to 325 degrees Fahrenheit (165 degrees C).

Two 12-cup muffin tins should be lined with paper liners.

Salt, baking powder, and sifted flour should all be combined in a bowl.

In a separate bowl, whisk eggs for one to two minutes.

In a separate large bowl, combine the milk oil and vanilla extract and stir with an electric mixer on low speed until combined.

Add the flour mixture gradually, stirring well after each addition.

Stir in the eggs.

Pour a small amount of batter into each muffin cup.

Bake in the preheated oven for 20 to 25 minutes, or until a cake tester inserted into the center comes out clean.

Five minutes of cooling in the pan are followed by transfer to a wire rack for complete cooling.
