Orange-Cranberry Muffins
These simple, family-friendly muffins have a sweet and tangy flavor thanks to fresh cranberries and orange juice.
Preheat the oven to 375 degrees F (190 degrees C).
Line 6 large muffin cups with paper liners.
Beat sugar and eggs together with a fork or electric mixer until blended.
Mix in vegetable oil.
Stir in vanilla extract and baking soda.
Add flour cranberries orange juice and orange zest and mix up nicely.
Spoon batter into the prepared muffin cups filling each to the top.
Bake in the preheated oven until a toothpick inserted into the center comes out clean 20 to 25 minutes.
